The pastel de nata is Portugal's most iconic pastry, and in this hands-on class you learn to make it properly. Forget the pale imitations sold around the world; your instructor, a trained pastry chef with years in Lisbon's best padarias, teaches the real technique. You will prepare the laminated puff pastry from scratch, learning the folding and rolling method that creates those impossibly flaky layers. Then you make the rich egg custard filling, getting the consistency just right so it sets with those characteristic caramelised spots on top. While your first batch bakes, the chef shares the fascinating history of these tarts, from their origins in Belem's monastery to the closely guarded recipe at Pasteis de Belem. You will bake two batches, eating the first warm from the oven (the only proper way) and taking the second batch home in a presentation box. A recipe card ensures you can recreate them in your own kitchen.
